Hermits are wines made from the same grape variety, Rabigato. Each wine is from a separate parcel, all having in common being in the Douro Superior, from Mediterranean/continental climate, exposed to the south and on shale soil of the Formação da Desejosa showing small rocky differences and altitude. Despite being vinified in the same way, the parcels give rise to different wines! The different "telluric information" are then evidenced that each place transmits. Vinification:Tread the whole bunches on foot in “calcatorium” (granite basin) for 3 hours followed by pressing in a vertical press. The must runs by gravity for cement vats in an underground cellar with excellent natural conditions of temperature and humidity. Spontaneous fermentation is carried out without control of temperature. 1 year internship in cement vats. Medium deep soil with a quartz microfault to cross the plot, 500 meters of altitude.
